Fresh Tomato Soup Recipes

– 4 cups chopped fresh tomatoe – 2 cups chicken broth – 4 cloves garlic – 1 large slice of onion – 2 tablespoons butter – 2 tablespoons all-purpose flour – 2 teaspoons white sugar, or to taste – 1 teaspoon salt, or to taste

Ingredients:

Gather all the ingredients for fresh tomato soup: tomatoes, chicken broth, garlic cloves, onion, butter, flour, sugar, and salt.

In a large pot, put together the tomatoes, chopped onion, minced garlic, and chicken broth. Heat it on medium until it starts boiling, then let it simmer for about 20 minutes to mix the flavors. 

Once it's done simmering, take the pot off the heat and strain the mixture through a food mill into another bowl or pan. Get rid of any leftover bits in the food mill. 

In the same pot, melt some butter over medium heat. Stir in flour until it turns a medium brown color, making a roux. Keep stirring constantly.

Gradually pour in some of the strained tomato mixture into the roux while whisking to prevent lumps from forming. 

Season the soup with a bit of sugar and salt to taste. Serve the hot soup and enjoy!
