Gluten-free Chocolate Chip Cookies Recipe

Ingredients: – ¾ cup almond flour – ¼ cup coconut flour – 1 tsp baking soda – ½ tsp fine sea salt (or ¼ tsp if using table salt) – Dash of cinnamon (optional) – ½ cup melted butter or coconut oil – ½ cup real maple syrup or honey – 1 tsp vanilla extract – 6 oz dark chocolate, chopped, or 1 cup chocolate chip

Instructions: 1. Preheat the oven to 350°F (175°C) and line a cookie sheet with parchment paper.

In a medium bowl, whisk together almond flour, coconut flour, baking soda, salt, and cinnamon.

Pour in the melted butter or coconut oil, maple syrup or honey, and vanilla extract. Mix thoroughly.

Stir in the chopped chocolate. Let the dough rest in the refrigerator for 5 minutes to allow the coconut flour to absorb moisture. If you prefer thicker cookies, chill the dough for 10+ minutes.

Scoop the dough onto the prepared baking sheet, leaving space between each cookie. Bake for about 11 minutes or until golden brown.

Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack. They will be fragile when warm but will firm up as they cool.
